Chocolate Chip Banana Bread Muffins Recipe

(Makes 10 regular size muffins)
Ingredients:
- 1/2 cup butter (equivalent to 1 stick of butter), melted
- 3/4 cup white sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 and 1/2 cups all-purpose flour (equivalent to 6.3 ounces)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup Greek yogurt or sour cream
- 2 over-ripe bananas, mashed
- 1 cup semi-sweet chocolate chips
Directions:
- Preheat the oven to 350 degrees F. Grease a regular size muffin tin and set it aside. (Be sure to grease it well or you may have trouble getting them out.)
- In a large bowl, stir the melted butter and sugar together.
- Add the eggs and vanilla extract and mix well. Set the wet ingredients aside.
- In a separate large bowl, whisk the flour, baking soda, and salt together.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Add in the yogurt or sour cream and the mashed bananas and mix until just combined.
- Gently stir in the chocolate chips. (See note below.)
- Pour the batter into the muffin cups, fill them almost all the way to the top. I got 10 muffins out of my muffin tin.
- Bake for 20 to 25 minutes or until the tops are golden brown and toothpick inserted into the center comes out clean. (Mine took 24 minutes.)
- Let the muffins cool in the pan before removing.
Note: I mixed 3/4 cups of chocolate chips into the muffin batter and saved the remaining 1/4 cup for sprinkling on top of each muffin. This is not required, of course, but that’s how I got chocolate chips to stay on top of each muffin.
