Chocolate Banana Bread


Chocolate Chip Banana Bread Muffins Recipe

(Makes 10 regular size muffins)

Ingredients:


  • 1/2 cup butter (equivalent to 1 stick of butter), melted
  • 3/4 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups all-purpose flour (equivalent to 6.3 ounces)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup Greek yogurt or sour cream
  • 2 over-ripe bananas, mashed
  • 1 cup semi-sweet chocolate chips


Directions:


  1. Preheat the oven to 350 degrees F.  Grease a regular size muffin tin and set it aside.  (Be sure to grease it well or you may have trouble getting them out.)
  2. In a large bowl, stir the melted butter and sugar together.
  3. Add the eggs and vanilla extract and mix well.  Set the wet ingredients aside.
  4. In a separate large bowl, whisk the flour, baking soda, and salt together.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Add in the yogurt or sour cream and the mashed bananas and mix until just combined.
  7. Gently stir in the chocolate chips.  (See note below.)
  8. Pour the batter into the muffin cups, fill them almost all the way to the top.  I got 10 muffins out of my muffin tin.
  9. Bake for 20 to 25  minutes or until the tops are golden brown and toothpick inserted into the center comes out clean.  (Mine took 24 minutes.)
  10. Let the muffins cool in the pan before removing.


Note:  I mixed 3/4 cups of chocolate chips into the muffin batter and saved the remaining 1/4 cup for sprinkling on top of each muffin.  This is not required, of course, but that’s how I got chocolate chips to stay on top of each muffin.
