Ingredients
- ½ cup California Walnuts, roughly chopped
- 2 cups whole wheat penne pasta, al dente
- 1 15 oz. can crushed tomatoes
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 2 tablespoons fresh basil, chopped
- 1 small zucchini, sliced and halved
- 2 cups butternut squash, cubed into 1" inch pieces
- 1 small yellow onion, peeled and sliced into 1" strips
- ½ cup reduced fat mozzarella cheese, shredded
- 2 teaspoons olive oil
Instructions
- Preheat oven to 350° F. Coat vegetables with one teaspoon olive oil and spread evenly on baking sheet. Bake for 25 minutes, then add the walnuts to one end and bake an additional 8-10 minutes.
- Cook the whole wheat pasta; set aside.
- In a medium saucepan, add one teaspoon olive oil and the garlic; sauté 1-2 minutes. Add crushed tomatoes and oregano; simmer for 10 minutes. Remove from heat; fold in the walnuts, then fold in the pasta and vegetables. Spread evenly into a 1 ½ quart baking dish. Sprinkle with cheese and bake 5 minutes, or until cheese is melted.
- Garnish with fresh basil.
