Veggie Baked Penne with Walnut Sauce

Ingredients


  • ½ cup California Walnuts, roughly chopped
  • 2 cups whole wheat penne pasta, al dente
  • 1 15 oz. can crushed tomatoes
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh basil, chopped
  • 1 small zucchini, sliced and halved
  • 2 cups butternut squash, cubed into 1" inch pieces
  • 1 small yellow onion, peeled and sliced into 1" strips
  • ½ cup reduced fat mozzarella cheese, shredded
  • 2 teaspoons olive oil


Instructions


  1. Preheat oven to 350° F. Coat vegetables with one teaspoon olive oil and spread evenly on baking sheet. Bake for 25 minutes, then add the walnuts to one end and bake an additional 8-10 minutes.
  2. Cook the whole wheat pasta; set aside. 
  3. In a medium saucepan, add one teaspoon olive oil and the garlic; sauté 1-2 minutes. Add crushed tomatoes and oregano; simmer for 10 minutes. Remove from heat; fold in the walnuts, then fold in the pasta and vegetables. Spread evenly into a 1 ½ quart baking dish. Sprinkle with cheese and bake 5 minutes, or until cheese is melted.
  4. Garnish with fresh basil.
